Tompouce met gebakken sardines, tomaat, komkommerkruid en een crème van geitenkaas

INGREDIENTEN

12	Bretonse sardines (8 filets)
12	sneetjes wit casinobrood, zeer dun gesneden
9 el	olijfolie
12 el	Chavroux-geitenkaas
6 el	kippenfond
48	Tasty Tom tomaten
	(ontveld en zonder zaad, 1,5 uur in een oven van 60 graden gedroogd)
12	takjes komkommerkruid of dille

BEREIDING

Bestrooi de sardinefilets aan één kant met peper en zout naar smaak.
Leg ze met deze zijde op een plakje brood (twee filets per plakje brood, sardine niet over het brood uit laten steken).
Bak ze aan de broodzijde goudbruin in olijfolie. Draai ze om in de pan (vuur uit) om warm te houden met de broodzijde naar boven.
Druk (bij voorkeur met bijvoorbeeld een ‘steker’; een holle buis) de gedroogde tomaat in een rondje op het bord goed aan, tot een ½ cm dik.
Verwarm de geitenkaas met de kippenfond en roer tot een gladde massa.
Zet dezelfde steker tegen het tomatenvlak en verdeel de geitenkaas hier omheen.
Leg de sardine met de broodzijde naar boven strak op de tomaat (zorg voor dezelfde grootte).

PRESENTATIE

Presenteer de tompouce op een bordje en garneer met een takje komkommerkruid of dille.
maak er een mooie streep naast met de crème van geitenkaas.
