INGREDIENTEN

Hamburgers

900 gr	Black Angus rundergehakt
150 gr	platte peterselie
1,5 el	jeneverbessen
1,5 el	venkelzaad
3 el	zwarte peper, vers gemalen
1,5 el	chilivlokken
5 el	zeezout, fijn

Uien

3 st	grote rode uien
2 st	sjalotten
3 el	bruine suiker
150 ml	rode wijnazijn

AFWERKING EN PRESENTATIE

14 st	kleine broodjes (zwart)
1 st	eikenbladsla
4	plakken ganzenlever
1	potje truffel op olie
4 st	tomaten
7	plakken Iberico-bacon
	crema balsamico (vijgen)
	olijfolie

BEREIDING

Hamburgers

Barbecue voorbereiden op direct grillen (heet).
Peterselie fijnsnijden; jeneverbessen, venkelzaad, peper, chili en zout in vijzel fijnmaken.
Geheel vermengen met rundergehakt. In 12 gelijke delen verdelen en hamburgers vormen. Laten aanvriezen in folie in de vriezer.

Uien

Uien en sjalotten schoonmaken en in ringen snijden.
Suiker karamelliseren, daarna rode wijnazijn er doorheen roeren op laag vuur. Daarna uien doorheen roeren en uien op 180 graden in oven een kwartier laten garen.

AFWERKING EN PRESENTATIE

Sla schoonmaken, tomaten afspoelen en in dunne plakken snijden. Bacon in weinig olie knapperig bakken en op keukenpapier laten uitlekken.
Broodjes opensnijden en kort roosteren.
Hamburgers op barbecue grillen.
Broodjes opbouwen, sla, tomaat, spek, hamburger, ganzenlever, ui, crema, truffel.
