Muntijs met gesuikerde groenten en Kadaifi

INGREDIENTEN

Muntijs

25 gr	muntblaadjes
625 gr	boeren yoghurt
190 gr	poedersuiker

Gesuikerde groenten

1 kg	suiker
200 gr	rode biet
2 st	laurierblaadjes
200 gr	winterpeen
2 st	kaneelstokjes
200 gr	truffelaardappels
5 st	kruidnagels
100 gr	pompoen
4 cm	verse gember
5	stengels bleekselderij
1,5 st	citroen, in plakjes
	scheutje vanille essence
250 gr	zwarte olijven zonder pit
1 st	grote sinaasappel

Kadaifi

1	pak kadaifi
	scheutje vanille essence
50 gr	olijfolie

BEREIDING

Muntijs

Maal de munt met wat yoghurt fijn. Voeg de rest van de yoghurt en suiker toe. Bewaar in de koeling.
Draai het ijs pas 20 min voor het uitserveren om kristallisatie tijdens het bewaren in de freezer te voorkomen.
Bewaar wat muntblad voor de garnering.

Gesuikerde groenten

Breng 1 ltr water met 1 kg suiker aan de kook en roer tot alle suiker is opgelost.
Was en schil indien nodig de groenten, snij deze in mooie even kleine brunoise (8mm x 8mm), de olijven in vieren, de citroen in plakken.
Zet 6 kleine pannetjes klaar:
Pan 1: rode biet met laurierbladeren.
Pan 2: winterpeen met kaneelstokjes.
Pan 3: truffelaardappelen met kruidnagels.
Pan 4: pompoen met plakken verse gember.
Pan 5: bleekselderij met citroen en vanille essence.
Pan 6: zwarte olijven met sinaasappelschil, geraspt of zestes.
Schenk in alle pannen suikerstroop zodat de groente net onder staat. Kook de groenten net gaar! Let op! Suikerstroop is veel hogere temperatuur dus het gaat sneller. Zodra de groenten gaar zijn de suikerstroop afgieten en de groenten laten afkoelen.
Laat de olijven langzaam trekken.

Kadaifi

Verwarm de olie met een beetje essence op laag vuur tot ongeveer 60 graden en laat vervolgens afkoelen.
Trek van de kadaifi plukjes af en vorm hiervan dunne nestjes, plaats dit op een bakplaat en besprenkel met vanilleolijfolie. Bak in 6 min af op 180 gr C.

PRESENTATIE

Verdeel de groenten over diepe borden en meng voorzichtig.
Plaats boven op de groenten het nestje kadaifi en daar bovenop een mooie quenelle van het yoghurt-muntijs.
Garneer met een topje munt.
