INGREDIENTEN

Bloemkool pistachepuree

16	scampi’s
1	avocado
	lente ui
1	appel
	limoen
	verse munt
	olijfolie
	kerriepoeder
	zout en peper

BEREIDING

Schil de appel en snij in hele kleine stukjes en besprenkel met limoensap.
Snij de lente ui heel fijn.
Snipper de blaadjes munt fijn.
Snij het vruchtvlees van de avocado in klein stukjes, besprenkel met limoensap en kruid met peper en zout.
Meng de lente ui, de appel, de avocado en de munt voorzichtig onder elkaar.
Verhit de olijfolie en leg er de scampi’s en in en kruid met kerriepoeder, peper en zout. Bak op een hoog vuur.

PRESENTATIE

Verdeel de mengeling over de glaasjes en leg er een scampi bovenop. Serveer meteen.
