Tomatenbavarois met crème van basilicum

INGREDIENTEN

Tomatenbavarois

400 gr	tomaten (300 gr netto, zonder zaad)
10 st	groene asperges
50 gr	ketchup
300 gr	room
3 bl	gelatine
2 dl	tomatensap
	peper en zout

Basilicum crème

1 bos	basilicum
1 tl	Sosa Gel Espassa
	(evt. vervangen door 1 vel extra gelatine)
100 gr	melk
200 gr	room
3 bl	gelatine
1 bakje	Shiso purper, ter garnering

BEREIDING

Tomatenbavarois

Zet de glaasjes alvast in de vriezer zodat ze goed koud zijn.
Schil de asperges en kook ze beetgaar.
Snijd de asperges in gelijke stukjes
Blender het tomatenvlees met de ketchup in de magimix.
Week de gelatineblaadjes in koud water.
Verwarm het tomatensap en los hierin de uitgeknepen gelatineblaadjes op.
Spatel dit mengsel door het tomatenmengsel van stap 3.
Klop de room stijf en spatel dit door het tomatenmengsel.
Verdeel de asperges over de glaasjes en vul tot 2/3e met de tomatencrème.
Laat snel afkoelen. Gebruik eventueel de vriezer om het proces te versnellen.

Basilicum crème

Blender de basilicumblaadjes met een klein beetje melk en de Sosa Gel Espassa (met staafmixer)
Maak de rest van de melk warm en los hierin de geweekte en uitgeknepen gelatineblaadjes op.
Meng de melk en de room door het basilicummengsel en wrijf het geheel door een bolzeef.
Giet in een kiddespuit en draai er twee patronen op en laat rusten in de koelkast.

PRESENTATIE

Spuit de mousse op de bavarois en garneer eventueel met Shiso purper.
